Fenugreek is a herbaceous plant from the Marrakesh area and belongs to the Fabaceae family. It is similar to clover, broad beans and peas. It’s a small trefoil plant that grows to 20-50 cm tall. Fenugreek flowers are off-white with triangular petals that form its corolla. The plant itself has a powerful and long-lasting aroma of freshly cut hay – this is why its Latin name is “foenum graecum”, or “Greek hay”. Its seeds and leaves have a bitter flavor which suggest a hint of celery.
