Iris Germanica is a perennial herbaceous plant, of the Iridaceae family, which is used to make butter or resinoids from approximately three years of ripening of the plant’s roots. It belongs to the group of bearded irises. Iris Germanica, native to the northern shores of the Mediterranean is largely cultivated in the Moroccan Atlas Mountains. Only its roots are used and is a highly-value product. Its flavor is pungent and bitter and its aroma is similar to that of violet. The roots are crushed to produce a fine and sweet-scented powder. After a substantial distillation process, iris butter is extracted and used as a perfume fixative with a sweet-smelling base due to its irone content.
